* chore(cmake): carry option-driven defines on pybind11_headers INTERFACE
PYBIND11_DISABLE_HANDLE_TYPE_NAME_DEFAULT_IMPLEMENTATION and
PYBIND11_SIMPLE_GIL_MANAGEMENT were directory-scoped
add_compile_definitions, which only reached the master-project test
build. On the pybind11_headers INTERFACE (like
PYBIND11_INTERNALS_VERSION) they also apply in add_subdirectory mode
and in the exported/installed targets.

Extend subdirectory_target and installed_target to check that
PYBIND11_DISABLE_HANDLE_TYPE_NAME_DEFAULT_IMPLEMENTATION and

usage requirements. Fails without the parent commit.

* Support free-threaded CPython (PEP 703)
Some additional locking is added in the free-threaded build when
`Py_GIL_DISABLED` is defined:
- Most accesses to internals are protected by a single mutex
- The registered_instances uses a striped lock to improve concurrency
Pybind11 modules can indicate support for running with the GIL disabled
by calling `set_gil_not_used()`.

This commit also adds `doc()` to `object_api` as a shortcut for the
`attr("__doc__")` accessor.
The module macro changes from:
```c++
PYBIND11_PLUGIN(example) {
pybind11::module m("example", "pybind11 example plugin");
m.def("add", [](int a, int b) { return a + b; });
return m.ptr();
}
```
to:
```c++
PYBIND11_MODULE(example, m) {
m.doc() = "pybind11 example plugin";
m.def("add", [](int a, int b) { return a + b; });
}
```
Using the old macro results in a deprecation warning. The warning
actually points to the `pybind11_init` function (since attributes
don't bind to macros), but the message should be quite clear:
"PYBIND11_PLUGIN is deprecated, use PYBIND11_MODULE".
Add a BUILD_INTERFACE and a pybind11::pybind11 alias for the interface
library to match the installed target.
Add new cmake tests for add_subdirectory and consolidates the
.cpp and .py files needed for the cmake build tests:
